Wine and Love v16

Another week come and gone with tomorrow starting July!

Many of you know the name of the Wine & Love Game by now; if not, I’ve started a Wine & Love Information Page for those who are interested on joining in the future.

The reasons I’m reaching for the wine bottle this week:

* I know there isn’t a full moon, but it *seems* like there has been with all the random life upsets taking place. Nothing really awful, but just small little annoyances. And some big annoyances.

* Throwing my neck out and not being able to move or turn very well. Most unfortunate. It feels and seems pretty muscular but if it’s not better later today I’ll be seeking some medical assistance. I can’t be a statue this weekend for the engagement party!

* I’m a bit of a stressball these days even though I’m working out, eating right, getting sleep. I blame the big and little annoyances above and some unnecessary worrying about things to come. With that said I’m trying, really hard, to let things go more. Let’s see if it works.

* Meal planning fail. Between Knight working late a few nights this week and then the whole neck thing, I’ve not been getting down in the kitchen like usual. Hopefully tonight I can return for the Mexican fiesta I had planned.
The reasons I’m loving life this week:

* Starting tomorrow at 5pm I have a four-day weekend. We’ll be headed to my home for the engagement party, friend and family time until late Monday and then Knight and I have the day on Tuesday for some R&R. Kind of looking forward to it.

* Finding neighbors who are willing and excited to watch Jack while I am on my work trip later this month. He does well at the kennel but he loves to be in his environment. It makes me feel better too knowing he gets personal care and attention numerous times a day.

* Getting together prints of our engagement photos for the parents, future in-laws and grandparents to gift them this weekend. Another something I can cross off my to-do list.

* Cheese curds. Enough said.

* Also, how cheap dairy products are in my new city/State. I mean, I’m not surprised really since they produce a lot of it, but it’s kind of a nice break on the old wallet.

* Finding a new Aveda salon in our small town and loving it.

Recipe: BLT Mac n’ Cheese

I’ve mentioned before that since I moved (it’s been a month already) I’ve been an aggressive meal planner. It’s working out really well: we don’t waste food, I don’t buy unnecessary things at the grocery store for the most part and we all know what to expect during the week making meal time much less stressful.

I have a pile of recipe magazines, books and my recipe binder that I pour over every week to find something new, delicious and easy to make. Yesterday’s dinner? BLT Mac n’ Cheese, courtesy of Rachel Ray.

Mac n’ Cheese ingredients:

* 4 slices bacon, cut into one inch pieces (I’d recommend 5-7 slices, especially if you have men who will be eating it)
* 12 ounces fusilli or rotini pasta
* 2 1/4 cups milk ( 2% recommended)
* 6 ounces softened cream cheese
* 2 cups finely shredded orange cheddar cheese
* 6 ounces cherry or grape tomatoes quartered
* Salt and pepper to taste

Mac n’ Cheese instuctions:

* Preheat the oven to 375°F.
* In large skillet, cook the bacon over medium heat until crisp, about 10 minutes. Drain.
* Meanwhile, in large pot of boiling, salted water, cook the pasta until *almost al dente* and drain.
* In the same pot, bring the milk to a simmer over medium heat. Stir in the cream cheese until blended.
* Stir in the cheddar cheese until melted (confession: I added about another half cup of cheddar cheese and I would recommend doing that; makes the sauce a bit creamier/thicker)
* Now add the pasta, bacon and tomatoes; stir until blended.
* Taste! Add salt and pepper as needed
* Transfer to a 9×13 inch casserole dish and back until heated through about 20 minutes
* Nora’s Addition: Take out about 5 minutes before done and sprinkle some salt/pepper and a small handful of cheese on the top. Continue to bake for remaining five minutes

Now for the “L” part of the BLT Mac n’ cheese, a mini homemade salad:

* 1/4 cup plain yogurt
* 1 tbsp apple cidar vinegar
* 1 small head romaine lettuce, thinly sliced

The “L” Instructions:

* In a large bowl, combine the yogurt & vinegar. Season with salt and pepper. Add the lettuce and toss to coat. Serve the salad with the pasta.

(I didn’t make the salad because Knight hates salad and all things lettuce, so I made myself some veggies instead since I can’t eat an entire head of romaine lettuce before it goes bad.)

Here’s the final mac n’ cheese product (no other pictures to share cause Knight and I were too busy chowing down to take photos of our plates):

Verdict: Five Stars. Seriously. Perfectly filling, awesome blend of flavors in one dish and really easy to make. Definitely going into the recipe bank and will be reprised in the coming weeks/months! Highly Recommend.

See it. Read it: June

It’s been awhile since I have done my monthly “See it, Read it” recaps which is largely because for a few months there all I was reading was Harry Potter and watching streaming TV shows on Netflix. Now that I’ve moved, settled in and have more of a schedule and routine, it’s back!

See It.

(Disclaimer: We watch quite a bit movies now; the nights and weekends we have the girls are spent getting them situated in bed, getting in our workouts, doing housework and watching movies. In time, like when we can find a good babysitter, that will change, but it’s working out fine for now.)

It’s Kind of a Funny Story. At first I wasn’t sure about this movie at all, but as it got into the meat of the movie it was SO good. Poignant. Appropriately funny. Positive. Definitely interesting. Zack Galifianakis does a great job (doesn’t he always?) in this more serious role, the movie soundtrack is something I definitely need to track down, and despite the serious subject matter (mental illness) the movie left me feeling optimistic. It’s an independent film which explains a lot (I love indie films) and it was just so… good. Highly recommend this movie.

The Dilemma. I had high hopes for this movie cause Kevin James & Vince Vaughn? Both funny dudes. The movie, however, not funny at all. Ok, maybe a few funny moments but overall it took way too long to get to the point. The only bonus was Tatum Channing being in this movie and he always is easy on the eyes. Otherwise, it was a waste of one hour and 45 minutes of our lives.

The Town. Wow. This movie? Awesome. Just awesome. I confess, I had my doubts about it mostly because I’m terrified of masks and people in masks. Really terrific acting across the board, a great plot and I was on the edge of my seat for most of the movie. Definitely highly recommend. It got two thumbs up from Knight too, so obviously a man movie.

The Company Men. This movie is an honest, raw look at the economic downturn. It follows three men, who all work for the same company, and how their lives change as the course of the company changes (read: layoffs, downsizing, and etc.). While not an overly happy movie, the acting by Tommy Lee Jones, Ben Affleck and Chris Cooper is incredibly powerful, flawless, and the movie itself is incredibly interesting. I won’t spoil the movie itself, but it’s worth the watch, especially if you’re looking for something different.

Iron Man 2. I had previously seen this, but Knight wanted to watch it. I loved it just as much the second time. Great effects, Robert Downey Jr. is fun as usual, and the appropriate amount of love, action and intrigue. For men who like action films and girls who have to watch them, you can’t do better than this.

Read It.

The Wednesday Letters by Jason Wright. I couldn’t put this book down. Such an amazingly beautiful tale of family, love, mystery, intrigue, hope, forgiveness, moving on, and friends. Just read it if you haven’t. I saw on GoodReads that there is a book called The Wedding Letters coming out September 2011 and I’m kind of excited about it.

Something Borrowed by Emily Giffin. I read this part of the book club that PinkFlipFlops hosts and while it was a fun chick lit read, it left me with conflicting emotions. Anything that deals with infidelity/cheating is hard for me to read sometimes. I struggle with wanting the main characters to have the lives and loves they want but at the same time, I wish there was another way to go about it. I am kind of interested in reading Something Blue, however, so maybe I’ll give it a try. It’s a sick curiousity as to what happens next I suppose. I am glad I read the book so that I can see the movie (you know me, always book before movie).

Catching Fire, by Suzanne Collins. As many of you know this is the second book in The Hunger Games series. I’ve had this book on my shelf for over a year and finally decided to succumb to the addiction that is this series. As per usual I read it in less than two nights, it gave me crazy nightmares, but I still couldn’t put it down. Such a creative route to take this series. I won’t say more for those who haven’t read the book but I’m anxiously awaiting the third book which I’m hopefully picking up this weekend.

I Remember Nothing: and Other Reflections, by Nora Ephron.Everyone knows Nora Ephron. Writer of When Harry Met Sally, Sleepless in Seattle, You’ve got Mail and countless other fabulous movies. She happens to be a lovely, hilarious writer. This book is a collection of mini-memoirs that she put together, all poignant in someway, funny and a few of them tear-inducing. I’m glad I read this and look forward to checking out some of her other books.

Babyville by Jane Green. Well, I didn’t really read it this month, but got about halfway through realizing I’d already read it. I love Jane Green books so was a tad disappointed that I’d already read it.

Currently reading Harry Potter #5 and Major Pettigrew’s Last Stand. Hopefully they will be  on the July read it list.

Wine and Love v15

I guess this week is going faster than I thought: it’s already Thursday.

For those of you new to Wine & Love, this is a chance for you to share what’s got you reaching for a glass (or bottle as the case may be) of wine (or your drink of choice) but also to take a few moments to reflect on what you’re loving this week, you know those things that make you smile, brighten your day and fill your heart with your love. Reasons I have a glass of wine in front of me:

* Holy crazy week at work. It started last Friday and it still hasn’t stopped. I think I have a handful of more grey hairs than before and there isn’t an immediate end in sight. I suppose it makes the work day go by quickly but it would be nice to have a calm day at work.

* Two allergy seasons. Yes, I had one in STL before I moved and I have a second one now. I think (hope) it’s almost over but the incessant sneezing is just no fun at all.

* Redundant/unnecessary questions. So. Frustrating.

* A crappy babysitter last weekend meaning our date night lasted a whopping 90 minutes. Lesson learned and searching for a new sitter, but having to pay a sitter for a job NOT done is kind of infuriating.

Reasons I can’t stop smiling:

* Last night Belle called me into her room after her bedtime to ask me if we could go to the park next weekend when we visit my parents, and maybe if we could walk to their pool? She said it in the sweetest voice ever and I just couldn’t resist her smooshy little cheeks. How could we NOT go to the park and the pool after that?

* My brother being willing to talk to Belle & Jolie on the phone (he hasn’t met them yet) to tell them he’ll go swimming with them. (In case you couldn’t tell the trip next weekend is the talk of the house. Including the things the girls want to pack. A week early.)

* Warm chocolate chip cookies and a glass of milk. Just YUM.

* This weekend is completely plan free. This is fabulous because the next four are packed. I’m ready for some downtime and maybe even getting a little cozy with my Netflix streaming queue.

* I’m making homemade BLT mac & cheese on Sunday night. I can’t wait. If it’s as delicious as I hope it will be, I’ll be sharing the recipe. Oh, and we are having homemade buffalo chicken sandwiches Friday night thanks to Lacey’s recipe.

* Group emails from faraway friends that have me laughing so hard I cry.

* One week from tomorrow I’m going home with Knight, the girls and Jack for the holiday weekend. I’m so stoked to see my parents, my friends and relax by the pool, watch fireworks and just chill out. I can’t wait!

On Being Engaged

Within 24 hours of being engaged everyone was asking when the date was (October 6th, 2012). Where the wedding will be (St. Louis). Who will be in the wedding (we’ve asked our friends informally but have things we *still* need to send them.) What kind of dress I want. What the colors will be. And you know what? I didn’t have an answer. I wanted to bask in the joy that is being engaged.

In fact, I still do.

We have made some big decisions as it relates to our wedding and the rest of it will come in time, likely after the bell strikes midnight on New Year’s eve later this year. I’m not stressed, worried, concerned about any of the wedding planning process at all. Instead I’m focusing on the things I love about being engaged. Like engagement photos (yes, I’ve peppered some throughout this post).

 

Or how people “ooooh” and “aahhh” over my ring. Or buying thank you cards that represent us as a couple to send to those kind of enough to send us engagement presents. (Clearly I take the picking of cards very seriously, but I don’t like boring old cards, you know?) I love looking through bridal magazines, making lists and ideas. I love that my family is just so excited for us and that my mom gets teary-eyed almost every single time we talk wedding stuff.  

I love that Knight and I have this extra time to get to know each other even more, to make plans, to dream big, to fall even more in love (I know, total schmoop but it’s true). I love thinking non-traditionally about our wedding, as in the event, and how we can make it  100% us (more on that in the future). I love planning save-the-date cards with our amazing designer. And most of all, I love that everyone once in awhile Knight looks at me, smiles and when I ask him what’s on his mind he says “Just thinking about you being my wife, that’s all.” My heart melts every time.

Part of the reason we chose a date in 2012 is so that we could enjoy this time of being engaged (and ok, also not stress too much with the move, the possible selling of the house at some point in the next 18 months, adjusting to being a family and all that jazz). And you know what? It’s so worth it.

Nora Confessions (IX)

Apparently I haven’t done a Confessions posts since January (no idea how I dropped the ball on that) and since I’ve had some confessions rolling around in my head for awhile, here we go again. Hopefully this will be back to a monthly installment from now on. View previous confession installments.

* Lady Gaga scares me. Seriously. Her hair, her make-up, her clothes. I like *some* of her music, but watching her perform just makes me uncomfortable, maybe because I don’t fully understand the points she is trying to make.

* I worry about the future of our nation sometimes given the things young kids these days do and say. (And yes, I realize that made me sound like a really old person.)

* When I do the 30 Day Shred, during the punching part of the workouts, I pretend I’m punching Jillian. I know, that’s so mean, but she bugs me so much. Her workout, however, works. Hello more defined abs.

* I’m in a wedding planning lull and I totally love it. I mean, wedding planning is fun but it’s nice to only have to focus on one big thing at a time (ahem, stilladjustingtosmalltownlife).

* I’m way too excited for College Game Day to start in a few months. WAY. TOO. EXCITED.

* I’ve had my iPhone for just over two weeks. I’m 99% sure I’m under utilizing it.  This makes me feel like a smart phone is really unnecessary at times. Any apps or things I *must* have?

* Last week I had french fries with a side of queso sauce for dipping. I don’t know if I can ever eat french fries without it again.

* For some reason I’m incredibly nervous about our upcoming engagement party. Really excited but also really nervous. Maybe it’s cause our parents are meeting for the first time?

* As of late I’m the worst person in the world when it comes to calling friends back. I really must work on that.

* I subscribe to “Real Simple,” and so far have yet to read the ones I’ve gotten in the mail, not because I don’t like the magazine, in fact I love it, but more because I’ve not made the time. Hopefully this week as I can’t wait for more new recipes, organization and design ideas to permeate my mind.

* I can’t stand adult cartoons like Family Guy, King of the Hill, American Dad. I find them incredibly annoying. Like want-to-scream-annoying.

Happy Thursday, all! It’s time for another installment of Wine and Love.
Here’s the deal: You share what has you grabbing for the wine glass, bottle or beer if you prefer and then you flip to the sunny side of life and share a list of what you love. Pretty simple, right? If you’re playing along this week, link-up below. New friends and participants always welcome!

The reasons I’m reaching for the wine:

* I feel like I’m bleeding money. First the TMobile Situation from last week, then over the weekend we found out Charter failed to send us a bill for the last two months of service despite us requesting one and asking to pay our bill resulting in a large sum of money being owed, and then new brakes for the car. I still have other things to take care of move-related but at this point it will have to wait.

* Getting a sunburn. I know, I know, who is stupid enough to get one these days? Well it happened to me (and Knight). Itchy and painful.

* This week is dragging on and on and on…. I’m ready for tomorrow at 5pm please.

The reasons I’m loving life:

* Emails from a high school best friend informing me of her recent engagement, her upcoming wedding and that I’m invited.

* Having a fiancé who is able to talk the car guys into a discount on my car work, saving me some serious cash.

* Dinner with two friends in the area, greasy and delicious cheeseburgers, french fries with queso sauce for dipping and lots and lots of girl talk. Also loved talk of future girls nights, triple dates, awesome blogger parties in August and just being with friends who get it.

* Jolie and Belle (Knight’s girls, those are their blog names) leaving me a really sweet message during my dinner with my friends last night, shouting that they love and miss me.

* Finding a fun nail polish I forgot I had, adding some fun to my toes, perfect for the near-summer weather we have.

* Date night! Knight and I have one planned for Saturday night. Nothing fancy, a simple trip to Starbucks, a walk in our Lake town, a light dinner and returning home to relieve the babysitter. It’s our first official date night since I moved here and I’m kind of excited about it.

* Snail Mail that includes letters from faraway friends, my Real Simple magazine, and some good movies on Netflix. Much better than bills.

* We should have our retouched engagement photos within the next five days or so! This means we can move forward with save the dates, our wedding website, and I can finally share them on the blog.

Lakeside Observations

I already have a Monday night ritual. Well, every other Monday night that is.

Knight works late every other Monday night so I treat myself to an evening of me time. I head into town (I’m still not used to that phrase, “into town.), park the car, grab a drink at Starbucks, and walk along the Lake. If I’m lucky I can snag a bench in front of the library, facing the water. My purse is backed with books, my journal, music, the cell phone. For awhile I just sit. Then I write. Sometimes I read, or talk on the phone. But mostly, I sit. Observe. Write. Let myself be alone with my thoughts. {photo credit}

The last time I did this it was a particularly lovely day and while it was well after 5pm, the beach was crowded, people were everywhere and there was some very interesting people watching such as…

* Apparently it’s back in to have one of those dangly belly button rings, you know the kind that extends a good inch past your navel? And if you’re going to wear one of those, you better be sure to roll your jean shorts down, unbuttoned of course.  Modesty is optional when it comes to bathing suits as well even if you’re still in middle school.

* No matter the age, girls still squeal when boys splash them in the water. And the guys? They welcome it when the girls gang up on them, attempting to dunk or splash them back.

* It never fails, a guy dressed nicely and wearing quality cologne will turn heads. I saw one young kid dressed nicely with the appropriate hipster touches of course, walk down the boardwalk and I think ten girls turned to stare at him. They all burst into fits of giggles too.

* If you’re playing frisbee at some point that frisbee is going over the fence. It’s inevitable. And then some super tall guy will try to be all macho and climb the fence but not without getting shouted at by the lifeguard.

* Sunscreen is seemingly optional; that or everyone is just unusually tan up here.

* The mothers/ladies of leisure or whomever do not spare the bling for a day at the beach. I was quite literally blinded a few times when the sun caught their stones. Wowzers.

* Babysitters or nannies, can’t quite tell which, are allowed to be distracted by their boyfriends while watching a gaggle of children. Or, rather, they should be watching the gaggle of children but usually aren’t.

*I’m old. Or felt old as I watched all the young kids running around, flirting, splashing, relaxing. Made me long for the days of summer vacation and trips, beaches and bikinis.

Are there any trends or behaviors you’re noticing that are different (or the same) from when we grew up in your area?

Bits and Pieces

 * Going to a baseball stadium that isn’t your “own,” is a lot different. Since we were cheering for the opposing team, we were clearly in the minority and were subject to heckling. Still, though it was fun and I’m excited to put a checkmark next to another baseball stadium! It also makes it much easier to have girl talk with Nilsa, an awesome blogger for those of you who don’t know her, for over two hours, to get distracted by how handsome her son is, talk with her and her hsuband, take in the sights, sounds, and crowd. Our team wasn’t winning, so maybe that was partly why the game itself wasn’t as much fun, but the atmosphere and friends we were there with? Amazing. Oh, and apparently tailgating at baseball games is the thing to do up here. Next time we go I’m so in for some tailgating action, even if it’s something I equate with college football. * Last week during dinner with the girls, they were both struggling to finish their applesauce. I pulled out a line I know my parents told me a lot when I was younger and not enchanted with my food: “It will make you grow to be big and strong…. and you can have your dessert if you finish all of your dinner.” Dessert that night happened to be vanilla pudding which both girls love. Jolie, the four-year-old, asked “Will pudding make me big and strong?” My response was no, not really, it just tastes good.  Jolie thought about it for a minute and then declared, “You know what? I think I’ll just have applesauce. I don’t want to eat things that won’t make me big and strong.” (Of course right before bedtime she decided she wanted her dessert, but it was still pretty adorable.)

* So there are outlet malls about 25 minutes from my house. Knight and I ventured up there before the aforementioned baseball game. There’s an Ann Taylor Loft Outlet. J. Crew Outlet. Banana Republic Outlet. Old Navy. And So.Much.More. This means danger especially since I know how to get there. All things considered we didn’t do too much damage: an outfit for each of us for the upcoming engagement party, some new sheets for our bed, a shirt for each of the girls, and a few other additions to our summer wardrobe. I’ve also decided it’s really fun to shop with a guy who likes to shop and is patient when you’re in a girl’s clothing store.

* I think I’ve mentioned before that I’ve been doing weekly meal planning here at the house. I post the menu on the fridge so that Knight knows what to expect and when the girls are here it’s much easier to get dinner going since we don’t have to hem and haw over what they want or what we should make. It’s really been a life saver for me after a long day of work and usually exercising; Knight says he loves it because he knows that he’ll be well fed and that there are usually leftovers too. In preparation for my meal planning I take about an hour on Sunday to go through my recipes, magazines, recipe notebook and mental repetoire to come up with one or two new meals, some classics and standbys and etc. I make the list of what I’ll need. And then? Thanks to Extreme Couponing, I look online at the ad for our local grocery store, making note of what I need that is on sale, what we could use for lunches and breakfasts and etc. No, I don’t clip coupons or have them, but just being aware of what is on sale has helped out our grocery budget immensely. That and I feel like a responsible consumer. It’s kind of fun.

* I’ve been a bit of a slacker in the blog department, I know. I’ve been spending my evenings settling into my new home, out exploring, exercising, curled up in the adirondack chair on my back porch reading, listening to music, chatting with Knight, making plans with friends, and savoring summer and this experience as much as I can. Rest assured I’m here and I’m doing well. I’ve got many ideas for posts swirling around in my head as usual and hopefully I’ll get them out on “paper” one of these days. If you want to help, let me know in the comments if there are any burning questions you have for me about anything going on in my life. I’ll compile and answer. If not, that’s ok too, just know that I’m here and reading blogs.

 

Wine and Love v13

It’s that time again! The one day of the week where I share what’s got me reaching for the wine glass (or bottle) and what has me loving life. Join in if you want, Mr. Linky’s at the bottom. New friends and blogs always welcome.

The Wines for the week:

* The fact that my old cell phone carrier (ahem, TMobile) didn’t have service in my area and apparently according to my contract, they do not guarantee service no matter what and so I am going to have to pay a $200 Early Termination Fee. Lovely.

* I think I’m a storm magnet. Seriously. As I type this the storms are raging outside, crazy high-speed winds are whipping through the area and the windows are creaking. Also dislike that I’m really incapable of enjoying storms anymore.

* Tension headaches. All last weekend I had a terrible tension headache caused by spinal issues and, of course, external stressors. It’s finally gone, so I’ll take it.

* Dust. I dust every few days here and it still seems like every single time I turn around there is more dust present. What the heck?

* Bronchitis. Apparently I got that during the move? I’m better now but last weekend was rough. Really rough. I think I have a six-pack solely based on coughing up my lungs every night.

My Loves for the Week:

* Reading Ladder to the Moon to the girls on Sunday night, and oh my goodness they loved it! They talked about it on Wednesday night when they got to our house and asked to look at the pictures. Pretty sweet if you ask me. (And special thanks to the Clever Girls Collective for allowing me the opportunity to receive the book for free!)

* When Knight helps in the kitchen. He loves to throw some food on the grill leaving me to do the sides only. Fine by me!

* The girls gave me a new nickname: Rockstar Nora all because I could push them both on the swings at the same time. If that’s all I need for Rockstar status, I’ll take it.

* Verizon, for having amazing coverage in my area. And for making the sign-up process seamless. And for having the iPhone that rocks.

* Fresh sheets that smell all snuggly and feel warm. Nothing better to crawl into after a long day of work.

* Amazing blog friends, comments and emails when I need them the most.

* Spending Monday night sitting lakeside, people watching, writing in my journal, soaking up evening rays. And for finding an Aveda hair salon on my way back to my car. My hair is already thanking me.

* Working out and being sore. Love it. So much.
